The Pinotage is from a single vineyard, that grows in granite soils and is a 46 year old dry land bush vine. Grapes were picked at 22 Balling. The grapes fermented naturally and with 20% whole bunches with the balance as wholeberry, with one punch down a day. After fermentation the wine is left for 7 days on the skins before pressed to old 300 L barrels. The wine matured for 10 months before bottling.
