The Chenin blanc is a 50/50 blend of two different vineyards. The first vineyard is a 39 year old dryland bushvine that grows in Granite, the second vineyard grows in Iron soil and are a 36 year old bush vine, also dryland. Grapes was picked separately and wholebunch pressed. Juice settled overnite with no enzymes. After 24 hours the juice get transferred to old 300 L barrels. Natural fermentation happened and the wine mature for 10 months on the lees before bottling.
