Farmed dry-land, thus not irrigated. Selected from a specific vineyard on our property. The vines are aged 51 years. This block delivers a distinctively different Chenin Blanc than the rest of the farm. The grapes were handpicked early morning and cooled overnight. Partially whole bunch and basket press. The juice was left to settle overnight without adding any enzymes. The wine did not undergo full malolactic fermentation to enhance its freshness of the wine.
